Chipotle Sauce

Ingredients:

  • 1/2 cup low-fat vegan mayonnaise (great recipe in ‘Sauces & Dips’)
  • 2 tsp. lime juice
  • 1 tsp. sugar
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground chipotle chili in adobe sauce (picture below)
  • pinch of ground cumin
  • Blend all ingredients in blender until smooth. Enjoy!
These chipotle in adobe sauce can be found in most grocery stores. There's a lot of peppers in this can, and only 1 is needed for this recipe. Seal the rest in a baggy and use in other recipes such that you want to add a kick to such as salsa, hummus, etc.

I was skeptical about dairy-free sour cream because I’ve always loved the real thing, but this recipe is surprisingly delicious! Creamy and tangy wonderfulness!

Ingredients:

  • 8 oz. silk tofu
  • 2 Tbsp. lemon juice
  • 1 Tbsp. red wine vinegar
  • 1 clove garlic
  • 1/4 tsp. sea salt
  • 1-2 Tbsp. water to get to the desired consistency

Blend all ingredients in blender until creamy, scraping down sides of blender as needed. Use in recipes such as Creamy Mushroom Stroganoff, or serve on baked potatoes, tacos, or enchiladas.

Sweet Ginger Sesame Sauce

Sweet Sesame Sauce

Sweet Ginger Sesame Sauce–

Ingredients:

  • 2 Tbsps. sesame seeds, roasted in dry pan
  • Dash of sesame oil (optional) OR 1 tsp. of tahini (available at most grocery stores)
  • 2 Tbsps. minced garlic (I used kind from jar)
  • 2 tsp. ginger root
  • 3 Tbsp. soy sauce
  • 2 Tbsp. agave nectar

Combine all ingredients together in a medium bowl. This sauce is terrific over noodles and stir fry veggies. Could also be used as a dipping sauce or marinate.

Easy, Low-Fat, Eggless Mayo

Low-fat, eggless mayo

  • 1 pound silken tofu
  • 1 tablespoon healthy sweetener (I use sucanat unrefined sugar or agave nectar)
  • 1 tablespoon red wine vinegar or fresh lemon juice
  • 1 1/2 tablespoons Dijon mustard
  • ¼ teaspoon fine sea salt

Remove water and drain tofu. I do this by setting it on a pile of paper towels in the refrigerator for a number of hours or overnight.

Scrape the tofu into a food processor.  Add the rest of the ingredients and puree until smooth and creamy.  Keeps in the refrigerator for about a week.

  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 tablespoon lemon juice

Basic Hummus Recipe

Hummus is a flavorful Middle Eastern bean dip made from chickpeas, lemon juice, and garlic. You can make all kinds of variations from this basic recipe. Today I added: 1 chili in adobe sauce and 3 tbsps fire roasted tomatoes. Other variations could include: spinach, red peppers, sun dried tomatoes, the possibilities are endless. Hummus is a great dip, and can also be used as a flavorful spread on wraps, sandwiches, and bean burgers.

Hummus Basic Recipe–

Ingredients:

  • 1 clove garlic
  • juice from 1 lemon
  • 1 can chickpeas, drained and rinsed thoroughly
  • 1 tbsp. Tahini (this is sesame paste, and can be found in the peanut butter section of most grocery stores)
  • a little bit of water or veggie broth to blend

Add all ingredients to a blender or food processor in just enough water or veggie broth to achieve your desired texture. Try a number of the variations listed above.

Easy Salsa

 

How-To-Make-Mexican-Salsa

EASY SALSA–

Ingredients:

  • 1 can fire roasted tomatoes (these are not hot, but full of flavor)
  • 2 cloves garlic
  • diced onions
  • small bunch of fresh cilantro (if you love cilantro like I do, add a lot!)
  • 1 chili (from a can of chilies in adobe sauce)
  • juice from one lime
  • sea salt
  • Lawry’s garlic powder to taste

Place all ingredients into a blender and lend for just a minute. I like mine still a little chunky. So simple and delicious!

Variation: I sometimes add frozen corn nibblets to this; just place frozen corn in drainer and run warm water over for just a few seconds, then add to salsa. 

Asian Sauce

Asian Sauce–

  • ¼ cup Tamari (or soy sauce)
  • ¼ cup water
  • 1 Tbsp lemon juice
  • ½ Tbsp sugar (I use an unrefined sugar called sucanat)
  • 1 tsp. minced garlic (I use kind from jar)
  • fresh chives (optional)
  • Arrowroot powder to thicken (if desired)

Whisk all ingredients in bowl.

I use this sauce with a lot of dishes including as a dip, topping for pasta, Asian Green Beans, a marinate for grilling, and much more. If you would like to thicken, add the arrowroot powder and simmer for just a minute.
